Well daily weigh-in buddies, what are your LC choices for Thanksgiving?
I love pumpkin everything. I've been making this awhile, at least a couple times a month. It's pretty good so I thought I'd post the recipe. I have no idea where I found this but with this I don't miss the pumpkin pie.
2 small packages of sugar free INSTANT vanilla pudding
2 cups of original almond milk (Carton)
3/4 tsp of pumpkin pie spice (or any combination of spices you use for pumpkin pie)
1 small can of pumpkin (NOT the pumpkin pie one)
I usually put the milk in a bowl and then while mixing with a mixer, gradually add the pudding mix to the milk. It helps prevent lumps.
Beat until it thickens. I then add the spice and 1 small can of pumpkin (not the pumpkin pie one, just the pumpkin) and continue to blend.
I then use some small 1/2 cup containers and portion is out.
