With what can I replace honey since it probably adds flavor too. I know I could use Splenda to sweeten, but should I also add an extract of some kind for taste?

Does anyone knows? Karen?

They make a sugar free honey, but it's pure milatol syrup, so not the best choice unless in small amounts and you know you can tolerate it. A small amount of molassas could give a brown sugar hint that could mimic honey.

I use a small amount of molasses when I want some stickiness.

I found Honey "Extract", a flavoring just like Vanilla or Almond. That gives me the flavour of honey when I really want it.

I use molasses only when I want the flavour of brown sugar or molasses .

If you want both the texture and flavor of honey and are sensitive to maltitol, you can use the honey extract Jude is referring to and combine it with some polyd.

.... i.e., make a syrup with the Polydextrose, sweeten it and flavor it....

Hiya.

It took me ages to find it; it was fairly expensive as I remember, 8.00 for 1 oz, but a tiny bit goes a very long way and it will last years, I am sure. There was (finally) a specialty store for candymaking and cake decorating here that carried a wide variety of the Lorann flavorings and oils. Try a gourmet or kitchen store...

If all else fails, available online from Golda's www.goldaskitchen.com, which has all kinds of goodies and is based out of Ontario, I think.

Thanks for the information. Honey was one of my favorite things in the "old days".............would be nice to have that flavor again.
