Bloody Eyeballs

Eyeballs can be served as appetizers or frozen in ice and put into drinks.


Per eyeball:
1 radish
1 pimento stuffed green olive

Peel radishes, leaving thin streaks of red skin on to represent blood vessels. Using the tip of the vegetable peeler or a small, knife, carefully scoop out a small hole in each radish, roughly the size of an olive. Stuff a green olive, pimiento side out, in each hole.

Prepare ice "eyeballs" at least a day before your plan to use them. Place 1 radish eyeball in each section of an empty ice cube tray. Pare the radishes down a bit to fit, if necessary. Fill the tray with water and freeze overnight.

Brittle Meringue Bones

3 large egg whites
1/4 tsp. cream of tartar
1/8 tsp. salt
2/3 cup white sugar equivalent
1/2 tsp. vanilla

Preheat oven to 200 degrees. Line cookie sheet with brown paper bag or parchment. In a medium sized bowl at high speed, beat egg whites, cream of tartar and salt till fluffy. Gradually beat in sugar. Add vanilla. Place in pastry bag fitted with a medium plain piping tip. Pipe 3" bone shapes onto parchment or brown paper bag. Bake 1 hour until set. Turn off oven, dry in oven 1 hour. Makes 4 to 5 dozen small bones.

Eyeball Potion


Serving: 10
Prep Time: 45 minutes
Cook Time: 10 minutes
Total Time: 50 minutes


8 ounces whipped cream
Thawed blueberries
1 ˝ cups boiling water
1 large package sugar-free gelatin – any red flavor
1 cup cold water
Ice cubes

1. Using a small ice-cream scoop, place 2 scoops whipped cream each of 10 dessert dishes for "eyeballs." Place a blueberry in each scoop for the "pupil." Freeze 30 minutes, or until firm.

2. Meanwhile, stir boiling water into gelatin in large bowl for at least two minutes until completely dissolved.

3. Mix cold water and ice cubes to make 2 1/2 cups. Add to gelatin, stirring until slightly thickened. Remove any remaining ice.

4. Pour about 1/2 cup gelatin around the two "eyeballs" in each dish, leaving the top of the "eyeballs" exposed.

5. Refrigerate 1-1/2 hours, or until firm.

Default Frozen Jack O'Lanterns

Frozen Orange & Ice Cream Jack O’Lanterns


18 navel oranges
1 recipe Dark Chocolate Ice Cream (Eat, Chat & Melt the Fat, Page 251)
18 whole cinnamon sticks

Cut off the top of the oranges and gently hollow out the pulp, leaving a thick shell; hollow pulp out of cut-off tops too. Carefully cut Jack-O'Lantern faces into each orange. Freeze hollowed shells for at least 1 hour.

Pack scoops of ice cream into frozen shells, avoiding letting the ice cream ooze out of eyes or mouth. Cut a small hole in the top of each orange. Set tops back on over the ice cream and insert a cinnamon-stick stem through the hole. Freeze for at least 3 hours or until serving time.

Halloween Hamburgers

1-1/2 lb ground beef
6 slices cheese
red or green bell peppers
pitted olives
6 lettuce leaves


Cut cheese, olives and bell peppers into desired shapes. A metal cookie cutter works well for the cheese. If you find it sticks, coat the cutter with vegetable oil first.

Lightly shape ground beef into six 1/2"-thick patties (or 4 larger patties). Choose a cooking method.

To broil, place patties on rack in broiler pan so surface of beef is 3 to 4" from heat. Broil 10 to 12 minutes or until centers are no longer pink, turning once.

To pan-broil
, place patties in preheated nonstick skillet over medium heat. Cook 10 to 12 minutes or until center is no longer pink, turning once.


Season with salt and pepper, if desired, after turning. During last few minutes of cooking, top with cheese, bell peppers and olives to make faces. Serve on lettuce leaves.

Icky Jello Worms

Cooking time: ~ 5 min.
Prep time: ~ 15 min., plus overnight chilling

You'll Need:
100 flexible plastic straws
an empty, cleaned 1-quart milk or orange juice carton to hold straws (or another tall container)

1 pkg. (6 oz.) sugar-free raspberry or grape flavor gelatin
3 envelopes unflavored gelatin
3 cups boiling water
3/4 cup whipping cream
12 to 15 drops green food coloring

Waxed paper

Combine gelatins in a bowl and add boiling water; stir until gelatins completely dissolve. Chill until lukewarm, about 20 min.

Meanwhile, gently pull straws to extend to full length; place in tall container.

Blend cream and food coloring with the lukewarm gelatin mixture. Carefully pour into container, filling straws.

Chill until gelatin is firm, at least 8 hours, or cover and chill up to 2 days.

Pull straws from container or, if you're using a carton, simply tear the carton away from the filled straws. Pull straws apart. Run hot tap water for about 2 seconds over 3 to 4 straws at a time. Starting at the empty ends, push worms from straws with rolling pin, or use your fingers.


Lay worms on waxed paper-lined baking sheets. Cover and chill until ready to use, at least 1 hour or up to 2 days. Worms will hold at room temperature for about 2 hours.

Default Orange Meringue Cookies

Orange Meringue Cookies


3 egg whites
3/4 C sugar equivalent
1/8 tsp. salt
1/8 tsp. cream of tartar
1/2 (3 oz.) pkg. sugar-free orange gelatin

Preheat oven to 475°. Cover 2 baking sheets with foil.

Beat egg whites until foamy. Add salt and cream of tartar. Mix the orange gelatin and sugar together, then add the mixture to the egg whites gradually, a tablespoon at a time, while beating. Beat to stiff peaks. Drop batter by teaspoonfuls onto the prepared baking sheets or free-form into ghost shapes. Place the baking sheets into the hot oven quickly, then close the oven door, and turn the oven off. Leave the cookies in the oven overnight (8 hours). Store in an airtight container.

Makes about 2 dozen cookies

kidee, Sandy & mamabeek, you are very welcome. I think Halloween is such a fun holiday. I'm trying to figure out what to give out for treats this year. I won't give any candy unless I can find sugarless. We don't get many kids here because we are the only ones on our block to give out treats. Last year I gave out mini bags of microwave popcorn and the kids really seemed to be happy with it. If anyone has any ideas, let me know.

Default Ghoul-ade Over Gopher Guts

GHOUL-ADE OVER GOPHER GUTS

3 ounces Sugar-free Cherry gelatin powder
10 Lemons or 2 cups bottled lemon juice
7 cups Water
1 cup Sugar Equivalent
Green food coloring

Prepare a bowl of gelatin dessert according to the directions on the package. Chill in the freezer for 45 minutes, or until partially set. While the gelatin cools, squeeze the juice from the lemons into a pitcher, being careful not to include any seeds. Add the 7 cups of water to the lemon juice. Stir. Add the sugar and stir again. Add green food coloring until Ghoul-ade is the desired shade. Pour Ghoul-ade into individual glasses, and then spoon partially set gelatin gopher guts into glasses. Include long spoons when serving this drink to help your guests eat their guts out!


Serves 8.

Black Halloween Punch


1 (.13 ounce) envelope unsweetened grape soft drink mix
1 (.13 ounce) orange unsweetened orange soft drink mix
2 cups white sugar equivalent
3 quarts cold water
1 liter sugar-free ginger ale

Directions
1 To make a frozen hand, wash a disposable glove, fill
with water, seal with a rubber band and freeze until hard.
2 Stir together grape soft drink mix, orange soft drink
mix, sugar and water until solids are dissolved. Combine
with chilled ginger ale just before serving. Dip the
frozen hand briefly in warm water, then peel off the glove.
Float the prepared hand in the punch bowl for a ghastly effect.


Makes 1 gallon (32 servings).

Mystery Punch with Frozen Hand

Ingredients
1/4 cup lemon juice
1 teaspoon ground ginger
2 quarts cider or apple juice
3 cups water
1 can (12 ounces) frozen orange juice concentrate
1 frozen hand (see below)


Instructions
In a large pitcher or glass gallon jar, stir lemon juice and ginger until blended. Add cider, water and orange juice concentrate and stir until blended. Cover and chill at least 1 hour. To serve cold, place punch in a large, chilled punch bowl. Add frozen hand or ice ring. Ladle into punch cups.


Frozen Hand

Ingredients
red, blue or green food coloring
water
1 new disposable plastic or rubber glove
(use glove without powdery coating inside)


Instructions
Add food color to water until you reach desired color. Fill glove with water, fastening end with a twist tie or rubber band. Hang glove from a shelf in the freezer and freeze overnight. When frozen, pull glove from ice and place "hand" in the punch.

Default Gooey Eyeballs

GOOEY EYEBALLS

6 eggs, hard-boiled, cooled and peeled
6 ounces whipped cream cheese
12 green olives stuffed with pimentos
Sugar-free Ketchup

Cut the hard-boiled eggs in half lengthwise. Remove yolks and fill the hole with cream cheese. Smooth the surface of the cream cheese as much as possible. Press an olive into the cream cheese center with the pimento facing up. Take a toothpick and dip it in some ketchup. Draw blood vessels in the cream cheese.
