If I remember correctly, Nutrition Facts labels under the rules are not required to count a carbohydrate if it's less than 1g per serving. They engineer these foods to allow for fudging. For example, a big jar of whole dill pickles--huge ones--lists "zero" carbs (and calories for that matter) per serving--because a serving is only one quarter of a pickle. Who cuts a big pickle in quarters??

When we take to making salads and stuff like Bonnie's, carb counts have to be estimates anyway. I've always used Fitday to keep my food diary. Many people use MyP.L.A.N. on this site. You can access the carb (and other) values easily from their pretty good database. In a short time, you'll have a list of your usual menus, and it's very quick to record your daily total. On Fitday, I get all the numbers and percentages, including fiber broken out, on a small chart below the list. Even after a long time on LC, this diary is an excellent check-up.

Yep - my serving size ended up an estimate too because I was sidetracked by our guest. I think I actually weigh or measure my food about a quarter of the time. It's too easy to forget when busy or extra hungry (which is when I really should measure!).

Not hyperventilating about fractions of carbs here & there has been something I've needed to learn. Fasting has been (so far) a cure for that.

Speaking of fasting - my fbg this morning was the lowest ever - 87!

Nice, Bonnie.

My way of "counting" carbs is a huge cheat. The veggies I eat are almost exclusively leafy greens, and not much of them.

If I have other veggies--tomatoes, cukes, even carrots, I make sure to have very little of them, and that's my carbs for the day.

The only exception to that rough rule is cruciferous veggies, like Brussels sprouts, cauliflower, etc. They are so very low in carbs that I can eat a serving of them, like I would with leafy greens.

Fruits are a rarity, and never more than 1/4 cup, and then it's berries. Because, again, very low carb, for fruit, anyway.

Fresh raspberries from the garden, with cream. Yum.

Sounds like we eat pretty much alike. I don't do near the fancy cooking I used to do. Between there being just the 2 of us & my WOE, it often isn't worth the trouble.
