Hachis Provençal
Provençal minced meat
Ingredients for 4 persons: 14 oz. chopped beef, 2 tomatoes (8.7 ECC), 2 medium zucchini (6.6 ECC), 1 medium red bell pepper (5.2 ECC), 2 celery stalks (4.6 ECC), 2 medium onions (2-1/2" dia) (15 ECC), 1 garlic clove (.9 ECC), parsley, 1 tablespoon peanut oil, 1 tablespoon butter, 3 tablespoons olive oil, salt, pepper.
Preparation: 10 minutes. Cooking: 20 minutes.
Preparation: Warm the oil and the butter in a frying pan and cook the minced meat in it. Cook gently the sliced thinly onions in the olive oil, add the chopped garlic, peeled, seeded and crushed tomatoes, the sliced zucchini and seeded and cut in strips peppers. When the vegetables are cooked, add the meat and mix. Adjust the seasoning, sprinkle with minced parsley and serve immediately.
