Default Halloumi cheese--my new favorite thing!

So I got a book from the library--I Quit Sugar--and the author kept raving about "halloumi cheese", and how you could grill it or pan fry it, and what a great snack it was. I'd never heard of it. But yesterday when I was at Trader Joe's, I found a package of it and bought it. Brought it home and promptly tried pan-frying it in butter. It IS seriously awesome! Very salty though, I'll have to find some good toppers to cut the salt. 0 carbs, 7g protein, and 9g fat in each ~ 1 oz slice.

You just throw it in a pan of butter on fairly high heat, watch carefully as it browns very quickly, and turn it as it browns. Nice and melty on the inside, crispy on the outside, and very flavorful--reminiscent of a grilled cheese sandwich. Has anyone else tried this? Any other tips for using this? I'm also wondering if it would be more available and cheaper at an ethnic market of some sort. I can't recall seeing it at a grocery, but I've never looked hard for it.

I love haloumi, it's Greek (actually I think originates from Cyprus). Similar to saganaki. A dash of lemon juice on the hot cheese puts it over the top.

Some brands are packaged with herbs that make it even better. It's not easy to find here, there's a brand at the supermarket I shop at but it costs about $11 for a half-pound!

I love ordering the flaming halloumi in greek bars- yum!!!! But i need a friend or two to share it with. otherwise it sits like a brick in my belly.
