Default Not another Cheesecake....

This is a recipe that was passed to me, so unfortunately I cannot take credit for it!!

Toasted Pecan Chocolate Swirl Cheesecake

- 6oz pecan halves
- 18 packets of sugar sub / divided
- 2 Tbs butter softened
- 1 env of unflavoured Gelatin
- 1 cup cold water / divided
- 2 Pkgs (8oz) cream cheese / lite optional / softened
- 1 tsp Vanilla
- 2 oz unsweetened chocolate, melted and cooled
- Fresh Berries / optional

Combine Pecans, 6 sugar sub pkgs, and butter in bowl. Press mixture in bottom & sides of pan. bake till golden...10 min.
In saucepan, sprinkle gelatin over 1/4 cup water, let stand 1 min.
Stir over low heat till gelatin dissolves.
Beat on hi, cream cheese, vanilla and remaining sugar sub. till smooth. Reduce speed to low and blend in the gelatin min and remaining cold water till smooth.
Reserve 1 cup of the mixture and poor the rest over the pecans
Mix gradually on low speed the remaining mix with the chocolate.
Dollop chocolate mixture on top and swirl. Chill 3 hours and garnish with berries & pecans if desired. Makes 8 slices and 8 carbs per slice.
