Candice's Low Carb Chocolate Peanut butter Protein Bars

I've been wanting to make some protein bars for a while now. And when I got this peanut flour I knew I just had to attempt to use it to make some!

Great for a quick snack..breakfast.. or even an easy lunch on the go!

These are absolutely delicious and I hope you enjoy as much as I do!




Ingredients:

2 Tablespoons (1oz) unsalted butter
2 Tablespoons (1oz) natural peanut butter (no sugar/salt added)
2 Tablespoons granulated Splenda
4-6 drops liquid Sucralose(I use EZ-Sweetz brand)
1/3 cup peanut flour

chocolate topping:
1 Tablespoon (0.5oz) unsalted butter
1 Tablespoon unsweetened cocoa powder(I use dutch process)
6-8 drops liquid Sucralose


Instructions:

Line baking sheet with parchment paper(you can use something smaller I just like using a small baking sheet for a flat surface)

In a heat proof bowl, melt butter and peanut butter in microwave on high for about 35 seconds. Once melted, take out and stir until smooth. Add Splenda and liquid Sucralose.
lastly add your peanut flour. Still until a smooth mixture is formed.
Divide mixture into 3 equal parts.
Roll into balls then press slightly between your hands to form a bar shape. Set down on the parchment lined baking sheet and finish your bar forming/shaping to your liking.
Place in refrigerator while making chocolate topping.

In small heat proof bowl or cup, melt butter in microwave.
Add cocoa and stir until smooth.
Lastly add your liquid Sucralose and mix til combined.

Take bars out of the refrigerator and equally divide the chocolate mixture between the bars. Smooth on the top with a spatula.

Set back in refrigerator until set up.

Store in an air tight container or baggie in refrigerator.



Nutritional information per 1 bar:

Energy 235 kcal
Carbohydrate, Total 7.15 g
Sugars, total 1.55 g
Fiber, total dietary 3.08 g
Protein 10.83 g
Total lipid (fat) 18.78 g

NET CARBS 4.07 g

I was hoping that I got more of the peanut flavor when I came up with this recipe, but I didn’t. So these do include a little peanut flour as well as peanut butter but have very little peanut flavor so that is why I just named them chocolate protein bars. I think mainly the peanut flour and peanut butter added extra protein.
None the less they are still pretty tasty and packed with protein! Not to mention pretty low in calories! If you don’t mind extra calories and carbs you can always add some sugar free chocolate chips, I have a few recipes here on my blog.

Like the note says at the bottom. Mine were not all the sweet. If you do want more on the sweet side add a few extra drops of your sweetener.

makes 8 protein bars

Ingredients:

1/4 cup cocoa powder
2 Tablespoons coconut flour
1/3 cup peanut flour
1 scoop Vanilla whey protein powder(I use LeanFit - 1 scoop equals about 1/3 cup)
1/8 teaspoon salt
1/2 teaspoon baking soda
2 eggs
20 drops liquid Sucralose *
1/4 cup butter
3 Tablespoons peanut butter

chocolate topping:
2 Tablespoon (1oz) unsalted butter
2 Tablespoon unsweetened cocoa powder(I use dutch process)
12-16 drops liquid Sucralose

1/2 recipe (makes 4 protein bars)

2 Tablespoons cocoa powder
1 Tablespoon coconut flour
1 Tablespoon + 2 teaspoons peanut flour
1/2 scoop Vanilla whey protein powder(I use LeanFit - 1 scoop equals about 1/3 cup)
dash salt
1/4 teaspoon baking soda
1 egg
10 drops liquid Sucralose
2 Tablespoons butter
1 1/2 Tablespoons(24g) peanut butter


chocolate topping:
1 Tablespoon (1oz) unsalted butter
1 Tablespoon unsweetened cocoa powder(I use dutch process)
6-8 drops liquid Sucralose

Instructions:

Preheat oven 350F
Line baking sheet with parchment paper.
In small bowl heat butter and peanut butter in microwave until melted.
Stir till smooth. Stir in liquid Sucralose. Set aside to cool a minute.

In a medium size bowl mix cocoa powder, whey, coconut & peanut flour, baking soda, & salt.
Make a small well in middle add egg & butter/peanut butter mixture. Mix well with a forum till dough forms.
Divide dough in to 8 equal portions(4 for 1/2 batch) and form a bar shape using your hand on your parchment lined baking sheet.

Bake ~ 350F for 8-10 minuites.

Cool completely before frosting.

In small heat proof bowl or cup, melt butter in microwave.
Add cocoa and stir until smooth.
Lastly add your liquid Sucralose and mix til combined.

Equally divide the chocolate mixture between the bars. Smooth on the top with a spatula.

Set in refrigerator until set up.

Store in an air tight container or baggie in refrigerator.


* Mine turned out not that sweet. So if you want more on the sweet side feel free to add a few drops

Energy 197 kcal
Carbohydrate, total 6.54 g
Sugars, total 0.91 g
Fiber, total dietary 3.25 g
Protein 10.29 g

These are a bit different from my other protein bar recipe. They have more of a cake like texture. Quite yummy but be sure NOT to over bake or else they become a bit dry since they have very little fat in them. If you use cream they will more then likely be a bit moister then when using either almond milk or water.

Makes 6 bars

Ingredients:

3/4 cup(60g) whey protein powder, I use Vanilla
1/4 cup + 2 Tablespoons peanut flour, sifted
1/4 cup of natural peanut butter
2 Tablespoons(1oz) unsalted butter
10 drops liquid sucralose
1/4 cup almond milk(or you can use cream or water just adjust nutritional information)
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1 Tablespoon chopped peanuts (optional, use as a topping)

Chocolate topping:
1/4 cup unsalted butter, melted
1/4 cup cocoa powder
12 drops liquid sucralose

Instructions:

Preheat oven to 350F
Line bottom of 8x8 or 9x9 square baking pan with parchment. If you don't have parchment you can butter inside of pan.

In a heat proof bowl, heat butter and peanut butter in microwave until melted. About 45 seconds. Set aside.

In a large bowl whisk almond milk, egg, vanilla extract, and liquid sucralose. Slowly whisk in your melted butter and peanut butter. Last fold in peanut flour, whey, salt and baking powder.
Batter will be VERY sticky!
Spread evenly into your prepared pan. Again batter is sticky so use a spatula to smooth.

Bake at 350 for 10-13 minutes

Let cool in pan completely before adding topping.

To make topping:
Mix cocoa & liquid sucralose with melted butter until smooth.
Spread mixture over your cooled, baked bars.

Top with chopped peanuts now if you are doing so.

Put pan of bars in the refrigerator about 10 minutes to set up.
Cut in to 6 bars.
Bars should be stored in baggie or air tight container in either the refrigerator or freezer.

Nutritional information for 1 bar(no peanuts on top):

Energy 191 kcal
Carbohydrate, Total 6.53 g
Sugars, total 1.17 g
Fiber, total dietary 3.05 g
Protein 17.08 g
Total lipid (fat) 11.01 g

These just look amazing! I've been eating these ********** which are really great. My favorite flavor has always been cookies and cream because I could never stop eating that ice cream Anyways, what I'm trying to get is would it be better for me to make low carb snacks like all of these instead of eating protein bars? I try to hit the gym 3-4 times a week but with my hectic schedule it can be a little difficult a times. The one bar on this thread that really appeals to me is Candiflip's chocolate protein bars they just look like amazing brownies. Do you think these have enough protein in them for me to get toned now that I'm starting to lose my body fat? Thank you

Seems like a lot of carbs and sugar alcohols to me. 5 g sugar, 4 grams SA, total 11 grams carbs (no fiber) per manufacturer's web site.

i note the link does not provide any carb information directly. Just says it is carb sensible.

I do not see nutritional information either.. but if you are looking for like 30g protein in one shot.. why not do a low carb protein shake? or do what I do.. eat eggs..eggs..and more eggs lol

I'm always trying to think of quick easy breakfasts and well protein bars seem to be the answer sometimes. I needed something I could keep in freezer and take out and eat quickly before work. So that is where this recipe came about.
Peanut butter and chocolate protein bars have always been my favorite so I tried to develop yet another recipe. I'm really liking this one! They are super chewy and great right out of the freezer. They really do remind me of fudge. You could always add some chopped peanuts for texture, but I didn't. Just be sure to adjust your nutritional information.

Ingredients:

1 2/3 cup(about 160g) chocolate protein powder*
1/4 cup peanut flour
2 Tablespoons dutch process cocoa
1/4 cup(2oz) unsalted butter

1/4 cup half & half
1/4 cup water

topping:
1/4 cup natural peanut butter(no sugar, no salt)
1 Tablespoon(0.5oz) unsalted butter
2 Tablespoons half & half
2 Tablespoons Splenda(or sweetener of your choice)


Instructions:

Line bottom of an 8x8 square baking pan with parchment. Set aside.

In medium sized bowl add protein powder, peanut flour, and cocoa powder. Set aside.

In small bowl add butter and peanut butter. Heat in microwave until melted, about 45 seconds.
Stir until combined.
Stir in half & half and water.

Mix wet mixture into your dry ingredients. Stir until smooth.
(Batter WILL be VERY sticky!)
Pour into your prepared pan. Smooth evenly in pan with an offset spatula.
Set aside.

To make topping:

In a small bowl mix cream and splenda. Stir until splenda is dissolved. Set aside.


In small bowl heat peanut butter and butter in microwave until melted.

Stir in cream/splenda mixture to your peanut butter/butter. Mix until smooth.

Pour on top of protein bars and smooth evenly.

Place pan in freezer for at least 1 hour to set.
Take out cut into 8 equal pieces.
Store in air tight container or baggie in freezer until needed.



*My protein is already sweetened so I don't add extra sweetener. If you don't find sweet enough add sweetener to your taste.

Nutritional information for 1 bar:

Energy 306 kcal
Carbohydrate, Total 6.34 g
Sugars, total 1.77 g
Fiber, total dietary 2.46 g
Protein 23.65 g
Total lipid (fat) 21.29 g

Any particular brand of protein powder you recommend(preferably available on shelves in Canada/BC and not mail order)

Candice thanks for the great recipe! I'm going to try it as soon as I can trust myself around jar of peanut butter. It is one of my all time favorite foods-I-can't-say-no-to. I mean...I might be able to now, but in a weak moment, IDK. I am going to save this recipe in my journal with credit given to you.

Not really.. I switch between brands, buy whats on sale.. cheaper at the time I do like PC brand best I guess though, but only buy when it's on sale .. it's like $30 for a 1kg tub.. I got this chocolate I used for this at Coscto on sale, it was $27 I think for 2kg.. so yeah lol Sorry I know that does not help much lol but at least I guess it says use whatever you want LMAO

These all look great, I've been looking for a good protein bar recipe for a while now. Unfortunately I don't have one to share with you, but I will surely try some of these. I'm a big fan of healthy on the go snacks
