Talking Pancakes - Cinnamon Coconut

Okay so this weekend I been experimenting with a treat for myself. Pancakes.

Is shredded coconut bad for BGs?

I am trying to find/create a recipe I can adapt to be no diary.

What I came up with a Diary Version right now. Here it is. I adapted lindas 3 minute chocolate cake.

1 egg
1 TB Cream (next I will try subbing full fat coconut milk)
1 TB Butter melted
1/2 tsp Vanilla
1/2 tsp Cinnanomon
1 TB water
3 TB shredded coconut (not the flour or flakes)
1/2 tsp baking soda

Makes 3.5 pancakes 4 inches round.

Break down is 235 calories, 5.5 grams carbs, 7 grams protein, 37 grams fat.

To me these are good just with butter. But I need to figure out a extremely low carb syrup. I have 6 carbs total I am allowed in the morning.

I wonder how this would be as a muffin like a cinnamon muffin... If it would rise enough...

Or maybe do it like the cake in a small glass bowl in the nuker.

Anyway, what i consider my first successful psuedo creating of a recipe.

This looks good lovinita. I like that the recipe doesn't have any sweetener in it. Just curious - if you like it without syrup why add that? Do you think the pancakes need it? Anyway, will be trying this. Thanks!

Sounds really interesting! Have you tried the pork rind recipe? I want to try it with coconut milk instead of cream.

Hey kitann,

Cause I really like syrup and cinnamon together... That is the only reason why... To me it is on combination that gives me a food orgasm

But I do think it is good with some butter on top. Which is why I almost wonder if it would be a good muffin..... Wondering if it would rise enough when all together.
