Default Stuffed Sausage Balls

Stuffed Sausage Balls

makes roughly 24 1" balls
check carb content on packages before you buy sausage, cream cheese and pepperoni rounds.

1 half package of ground breakfast sausage (recommend hot)
Half cup mushrooms chopped (I use stems from left over stuffed mushrooms sometimes)
3 Tbsp onions chopped
1/4 cup shredded sharp cheddar cheese (be careful of preshredded cheeses. Many manufacturers use corn starch to keep the cheese from sticking)
1/4 cup cream cheese
20 pepperoni rounds chopped

Mix and make 1" balls
Place on lightly oiled tin foil in baking pan (for ease of clean up)
preheat oven to 350
Bake for 20-22 minutes or until sausage is thoroughly cooked.

Supper yummy. I keep em in the fridge for a quick microwaveable snack. Started having more snacks ready after I learned that going hungry and skipping meals was counter productive to me loosing weight. Was actually pretty relieved to find out my body would think it was starving and simply slow my metabolism down. Now I eat smaller meals and do more snacking. Best WOE ever!

These sound good. Does the cream cheese act as a binder?

the cheddar cheese and the sausage do the most binding. The cream cheese keeps the flavor light so you don't get that over powering sausage taste.

These sound so good. I'll have to leave the pepperoni out or I'll have "sausage fingers" in stead of sausage balls. LOL That stuff makes me swell up so. But I think they'll be pretty good without it. Thanks!
