Amount - Measure - Ingredient -- Preparation Method
MORNING:
5 servings coffee, brewed -- 6 fl oz, black
32 fluid ounces water
125 grams cottage cheese, dry Island Farms
2 tablespoons syrup, sf DaVinci Hazelnut
MIDDAY:
1 1/2 cups cauliflower -- pureed
1 1/2 cups Sloppy Josephine
SNACK:
100 grams lean chicken meat
120 grams pork roast
EVENING:
8 ounces pork roast -- rack of pork
1 serving Salad, My Usual Dinner
2 tablespoons Dressing, Zesty Italian, Kraft
2 servings Jello Light, prepared -- lime
1/4 cup whipping cream
32 fluid ounces water
2 servings coffee, half decaf homesize cup w cream
3 servings coffee, half decaf homesize cup w stevia

Calories: 2291
Protein: 152 g 27 %
Fat: 170 g 67%
Carbs: 37(10) g 6.5%

Weight: 187 (OUCH!) 1st thing in the AM

Thoughts:
- rocky start today; kept forgetting to track what I was eating. Out of practice, I think.
- have been very sloppy on the water intake lately, too, intake tracking has uncovered that dirty little secret; will have to buck up!
- the Somersizing aspect of my approach seems to have been reduced to a serious fondness for whipped cream and the occasional bit of fruit, WITHOUT the 'combining' aspect... I think this is hazardous so will try to keep that in focus. Retrain. Treats only, and only occasionally on Reg LC days.

125 grams cottage cheese, 2% fat
SNACK:
80 grams lean beef -- deli sliced
200 grams turkey breast, boneless and skinless -- deli sliced
EVENING:
1/2 cup romaine lettuce
1/2 cup cucumber
1 tablespoon red wine vinegar
3 tablespoons chicken stock -- w rosemary
1 teaspoon dijon mustard
400 grams chicken breast, no skin, no bone, piece -- tenders
2 servings Jello Light, prepared -- Lime

Calories: 1375
Protein: 220 g 67 %
Fat: 39g 27 %
Carbs: 18(1)g 5.4 %

Activity: the usual work (seated but for the printer runs); 10-PIN league bowling (12 lb ball), so STOP LAUGHING
Measurements: not

Weight: 1st thing, AM 187 (still ouch and probably for a time to come)
Thoughts:
-today was a reminder to be more organized, but I suspect I'll get back in the swing of things fairly quickly.
-10-pin bowling right after work; hefting that 12 pounder through 3 fairly fast games was exhausting (but I was already tired, can't blame Stillman )

Just a quick note to let you know that I haven't given up on this so quickly....

This last week it's been the run up to the pre-Christmas orders, even MORE computer problems (I'm the fix-it gal, that's me), and for some completely unknown reason I decided to upgrade my MasterCook software (which I use for food logging and recipe development, of course)! Not to mention that nasty weenie little sinus cold I've beaten into submission BUT....

Well, enough whining. Should be able to finish up the missing days' reports in MasterCook 6 (which is a memory pig, should anyone want to know) by sometime late Monday... tomorrow... I keep SAYING that!

Yes indeedy, I'm reading this!! I was wondering if you had fallen off the edge of the western world.... or missing in action or somthin'....or just not wanting to post your menus for the rest of us to see. I'm really glad you haven't given up on the project (since you started this one!).

Thumbs up Almond Cookies

Hi Judi!

I thought I would post this here so it'll be easier for you to find.

1 1/4 C almond flour
1 C Splenda
1 egg
1/2 tsp almond flavor
1/4 C butter

Mix all ingredients well. Makes 24 balls, press flat on ungreased cookie sheet. Bake at 350 for 15-20 mins. 1.3g carb per cookie

Judi, I actually used slightly more butter than 1/4 C, when the cookies were down, they were surrounded by melted butter, so I just let them sit until the butter was absorbed back into each cookie. I think that's what made them more moist? They were GOOD and a low-carb staple in my house! DH actually likes these better than most cookies I make!! Go figure!!!

Oh, just remembering, throughout the many batches I have made, if you don't cook them too long, they hold together better. I think I only cooked mine for about 15 mins - when they were getting browner around the edges.

I hope these turn out for you!
