I made egg crepes and cut them into linguine style "noodles", and had a jar of Vodka Pasta Sauce which was surprisingly really good! Added a little Parm. That was last night and I have enough left over tonight for dinner, too.

Last night was a new to me dish that I adapted for my diet - a Torta Pasqualina - essentially a swiss chard, cheese and herb tart that I made without the puff pastry crust called for. Italian sausages on the side.

Tonight will be salad with a blue cheese yogurt dressing, chicken piccata over kale or zucchini, a serving dark chocolate with nuts.

oh yum, Pat. Sounds really good.

I had my breakfast dish for dinner last night - George Stella's Cauli "Mac" N Cheese. Tonight, we'll see...

Yesterday I had chili cheese turkey burgers, and zucchini fritters.

Today will be a family recipe for an Italian Sausage pie that I amended in a couple of ways, most recently, to have a cauliflower-cheese crust, and some chicken for extra protein.

That's a good one.

I have modified it to one bowl dinner lately. Last night, broccoli, hot cappicola ham strips, and white cheddar cheese sauce.

A family recipe for an Italian Sausage Pie typically made by them around Easter, that I amended and then amended again to be low carb. A serving of baked chicken and a salad with my serving of the "pie".
