Yummy Tuna/Garbanzo Salad w/ Lemon Dressing
I just had to share this...it's so tasty and so good for you with the omega 3's and all. It's my new favorite tuna salad--very quick and satisfying. Makes 2 servings, about 15g countable carbs each. Use any non-starchy veggies you like to personalize it.
2-3 T mayo
1/2 T dijon
1/2 tsp grated lemon zest
Mix dressing and set aside.
1 can albacore tuna, drained & flaked
2 T fresh lemon juice, about 1/2 lemon
2/3 C garbanzo beans, rinsed & drained
1/4 C chopped celery, to taste
1/4 C chopped red onion, to taste
1/2 C choped fresh parsley, to taste
1/4 C chopped tomato, to taste
Salt and Pepper, to taste
Toss tuna in lemon juice. Add the rest of the indredients, plus dressing, and toss gently. Serve over a mixed green salad tossed in oil and vinegar dressing & with crackers (as your carb allotment permits).
