Default Low-saturated fat questions

So I see that she says in The Program that you can still have full-fat cheese and butter on the low-sat fat plan....so what is it exactly that makes it low-fat? For those who follow the low sat fat plan--what major modifications did you make to the regular plan? LF sour cream, lf cream cheese, 1/2 and 1/2 instead of heavy cream????
