Default Flax muffins combined with peanut butter bread

I love my flax muffins with peanut butter on them but have trouble taking it to go without making a mess.. so I combined 2 of my favorite recipes

First I made a batch of the Mr. Peanut sandwich bread

Mr. Peanut Sandwich Bread

1 cup natural peanut butter, smooth
3 eggs
1 Tablespoon vinegar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 packet sweetener (optional) **(I used 4 packets of spelnda I like my peanut butter sweet)

Blend peanut butter and eggs until smooth. Add in remaining ingredients.

I scooped the batter into my silicone muffin pan (makes 12 muffins)
And baked it at 350 for 15 minutes and took it out of the oven.

I then filled up the rest of the muffin tin with the flax muffin recipe I use that I got off Lindas website but left out the cinnamon and used raspberry Da Vinci syurp.

And baked for another 12 minuets

KIM'S FLAXMEAL CINNAMON MUFFINS

3 eggs
1/4 cup plus 2 tablespoons oil
1/4 cup sugar free syrup **(I used raspberry Da Vinci syrup)
2 tablespoons water
1 tablespoon vanilla
1 cup flax meal
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 tablespoons cinnamon **(I left out the cinnamon)

And ended up with these.


The picture really doesn’t do them justice they are a little ugly but really good and will keep me full for hours I will normally have one for breakfast and not really be hungry until dinner.

I have no idea the nutritional information on them.. and the original recipes weren’t created by me
