Hi Everybody!

Here is our new check in thread for October. Our weighin will be here too.

I hope that you are all doing well as we head into our fall/winter season.

Actually yes, I do need ideas on low-carb b-day cakes... Mine is coming up and I soooooo badly want a chocolate cake! If anyone has any suggestions I'd definitely be open to them!

I don't bake so I can't help you with a recipe BUT...I can tell you that a real cake works when we use "the 3 bite rule". Have your favorite and you can eat 3 bites....big bites if you need...but 3 bites and not another bite more. Can you do that? I used the 3 bite rule as I lost my weihgt and it was a lifesaver!!

Also, if your mom does not have access at work, does she have acccess at home...she is doing this half assed and will get no where like that. There is no wine in phase I and 1 glass once in while in phase II...not 2-2 1/2 glasses almost nightly. NO breadcrumbs on chicken or M&Ms either.....What plan is she following...her own?

I've had this one before and it's actually quite tasty. It is high in calories though, but is low carb. I think I got it from Linda's LowCarb Recipe site. I can't remember, sorry.



3 MINUTE CHOCOLATE CAKE
1/4 cup almond flour, 1 ounce
1 tablespoon cocoa
1/4 teaspoon baking powder
3 tablespoons plus 1 teaspoon granulated Splenda or equivalent liquid Splenda
2 tablespoons butter, melted
1 tablespoon water
1 egg
Mix the almond flour, cocoa, baking powder and granulated Splenda, if using, in a 2-cup glass measuring cup. Stir in the liquid Splenda, if using, butter, water and egg. Mix well with a spoon or fork. Scrape batter down evenly with a rubber spatula. Cover with plastic wrap * and vent by cutting a small slit in center. Microwave on HIGH 1 minute until set but still a little moist on top. I had to do mine for 1 minute 20 seconds. Cool slightly and serve warm topped with whipped cream or cool completely and frost as desired.
Makes 2 servings
Can be frozen
* I'd forgotten to cover mine with plastic, but it came out wonderful anyway. I think the plastic would probably keep it very moist, perhaps more like a pudding cake in texture.
With granular Splenda:
Per Serving: 237 Calories; 22g Fat; 7g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs
With liquid Splenda:
Per serving: 227 Calories; 22g Fat; 7g Protein; 5g Carbohydrate; 3g Dietary Fiber; 2g Net Carbs

Thanks for that recipe Char!!

I hope that you are all having a great weekend! It seems to be hard to stay on plan when the weekends are here. I see it over and over again. I used to struggle with it but seem to have moved beyond the struggle into an acceptance of this being the way I eat all the time.

One thing I know is that going off plan on the weekends will have you maintaining your weight on not losing weight. all the work you do during the week gets undone by weekend off plan eating. Then it takes your body 3 days of on plan eating just to get back into weight loss mode....which then gives your body only 2 days of on plan eating to hopefully see loss. Before you know it, its the weekend again and off plan we go!!

So we end up spinning our wheels, not getting anywhere except frustrated. My wish and hope is that you all find this out as I did, before you get so frustrated that you give up. Weekends off plan do not give us what we want or need when it comes to seeking weight loss. So make your choices wisely!!

Judy -
I'm too afraid to do the 3 bite rule, I haven't cheated yet and I'm really proud of myself so I'm not worried about the sugar I'm more worried about being dissapointed that I couldn't say no to the cake. Does that make sense? I know eventually there will come a time when I have to bend a lil but if we are having the b-day party at my house and we're having a high sugar/ carb cake then I may just have SF pudding! As for my stepmom, she is doing it half-assed and you're right, it won't work. She and my dad are big wine lovers and she only has 15lbs to lose so I suggested that she start on PHASE 2 BUT NO MORE CHEATING!

That sounds delicious! I LOVE cheesecake!
You know I actually heard about a Sugar Free cheescake in Women's Health Magazine, I think I may call the Cheesecake Factory and see if they carry one!
It'll probably be high calorie but I'll only have a little slice!
