i think i might be the ONLY member on this huge forum, who pines for veggy burgers! But when i started eating meat again i had been veg half my life- i was 28 at that time, so tastes are pretty hardwired.

now 3 years later- i LOVE chicken and turkey and seafood/fish, and bacon. i am warming up to pork chops- a few bites is fine, but have not "conquered" a whole one. But beef freaks me out- it really reminds me it is MEAT. occasionally i try a bite of burger or beef in a stirfry, and i just ew......!!!!!!

for the record, i think it is HEALTHY to eat meat. ugh.......

MsMum, I LOVE coleslaw- any left ?

Nope, between my bf and I we ate it ALL, though I only made a half recipe. The fire slaw has cabbage, peppers, green onions, jalapenos, sweetener, vinegar, oil, and spices. It's an awesome contrast between the chilled slaw and the fiery heat of the jalapenos. I've recently gotten into recipes with heat and I'm loving this one.

Last night we had thick grilled hamburgers, roasted cauliflower, and sliced cucumbers and tomatoes from the garden.

Still working on what to do for tonite

one way we try to save a little money is having eggs for dinner some nights.

tonight:
going to make a mexican quiche- fajita seasoning with cheddar for the base- topped with grilled bell peppers, fresh salsa and sour cream.
green salad on side- likely go with ranch type dressing.

wine slushies- to celebrate summer weekends

bed of brussel sprout "hash" with sunny side up egg on top, freshly roasted garlic, goat cheese and drizzle of balsamic.
savory sausage for the fella.

*trying to eat up stuff in freezer/ save cash so loads of repetition right now/ variations on a theme for about a week*

Crumbled Italian sausage, peppers, onion and mushrooms. I added a splash of white wine and a tiny bit of BBQ sauce to give it a nice, thick glace. Sooooo good.

NY Strip steaks with stewed 3 zucchini sliced, 1large tomato chunky diced, 1 very small green bell pepper diced, 1/8c onion diced, 3 cloves garlic minced, 2 bay leaves, salt & pepper, garlic powder...and 1/2 stick butter and 1 inch water in pot. Cooked on low for an hour. The stewed veggies make such a nourishing and flavorful broth.
