does she have a recipe for pancakes you could share with me?

She doesn't but I do!

Cottage cakes:

1 cup cottage cheese
3 tbsp ground almonds
3 tbsp soy flour (I use Atkins bake mix)
2 eggs
1 tbsp Splenda (optional)
2 tbsp cream
1/2 tsp baking soda (if you don't use the bake mix)

Entire recipe has 33 carbs so if you half it you'll be good to go!

Hint - when frying them up, flip them way later than you would normal pancakes or they will fall apart. Also make them small - dollar sized is good.

why would the cookbook even include potato pancakes ~ 35 g of carbo--even Bisquick has less!

Lisa, Do you whiz the cottage cheese in the food processor before mixing in the other ingredients? Also, I wonder if full fat ricotta cheese would work in this recipe. I like it better than cottage cheese, though sometimes ricotta 'toughens' when I cook it. I might do a some experimenting to find out.

I made them this a.m. before I checked this thread, and here's what I did:

First, razzle's own flour mix: 1/2 almond flour, 1/4 soy, 1/4 brown rice flour (yes, carbier, but lighter than the other two flours, too)

1/2 c razzle's own flour mix
1 egg
2 T melted butter
salt
baking soda
2 T sour cream (didn't have any regular cream, and this worked fine)
2 t Splenda
2 T water
3/4 c. blueberries

I put butter on and ate some ham alongside, since this is pretty carby (21 ECC, I get).

Raz - those sound excellent! And that's not too bad for carbs on a workout day!

Twig - yes - I just make up a batch in my blender and keep it in the fridge. I wouldn't make it ricotta (too thick) but I do put ricotta and some raspberries on top.

I saw an Atkins-brand pancake mix in the GNC nutrition store.
