Yesterday was low carb pizza. The crust is made from finely chopped cauliflower and egg. It's topped with some low carb sauce, meat, jalapenos, olives and cheese.

last night was baked chicken legs with Provençal herbs, and shirataki noodles tossed with homemade pesto sauce and a few about a tablespoon of chickpeas.

Last night: Deep dish pizza quiche (mini pepperonis, onion and bell pepper) and Caesar salad.

Tonight (cooking now): Creamy baked chicken thighs and broccoli with butter and herbs.

Created a stuffed cucumber boat thing last night. Scooped out a few cukes then microwaved them, added seasonings, and put them under the broiler for a bit to make them less mushy. I had previously fried up some ground beef with onion, garlic, and seasonings, so I added a little tomato sauce, and put that mixture in the cukes with some shredded parm. Seasoned it up quite a bit, and the result was pretty good. Wouldn't want it every day, but it was a nice change of pace.

I also included a couple tomato slices.

Took a 12 oz ribeye and cut it in half. Put a piece of salami on each, then sprinkled some smoked cheddar cheese chunks on top of that, the cut some pieces of bacon and covered the two steaks completely with the bacon. Put it on the pellet grill for about 20 minutes while I rocked out to some Led Zeppelin I in the garage.

Did you know hydrogen burns with an invisible flame? That famous picture of the Hindenburg going up flames, those flames are from the burning structure, not from the hydrogen.
