im staying close to an induction type of diet for now but i have been trying out cheesecake recipes, one was horrible, the other was not too bad, next time im using a traditional recipe but just exchanging the sugar for splenda. also i will leave out the crust, believe it or not this site has alot of low carb recipes for just about any treat you can think of. I dont know about you but i know if im going to be doing this for life i will need cheesecake! I just need to know that its out there. who wants to go without sweets forever?

i use a site on the internet for low carb cooking. so far so good. i made a cheesecake using my recipe but used splenda, no flour and no crust. cooking time is less. and it takes the cake longer to cure. by the second day it will taste much better.

I found a no bake cheese cake in the recipe section that I just love. George Stella of Low Carb and Lovin' it has a similar recipe for key lime cheesecake. that includes ricotta cheese that I may try.
