While we will probably be going to my in-laws, and my MIL will make the turkey and green beans and lots of other unmentionables, this is what I plan to add to it for my husband and myself:
Deviled Eggs
Faux stuffing (recipe below - but not my recipe...got it from here years ago.)
Mashed Rutabaga
Baked sweet potato half with cinnamon sprinkled on and generous butter
Broccoli with toasted almond slices in gingered brown butter
Brussels sprouts and half of a diced carrot sautee'd in bacon grease with bacon crumbled over
LC cranberries
LC pumpkin cheesecake or pie with homemade lc whipped topping
Another LC chocolate dessert
Here's the stuffing recipe and we love it!
SAUSAGE AND HERB STUFFING
3/4 lb. turkey sausage (you may use pork breakfast sausage)
1/4 cup finely chopped celery
1/4 cup chopped red onion
2 eggs
2 cups coarsely chopped cauliflower
1/2 cup diced yellow squash
1/2 cup grated parmesan
1 Tbsp. chopped parsley leaves
3 Tbsp. chopped fresh sage leaves
3 Tbsp. chopped fresh thyme leaves
1 Tbsp. minced garlic
1/8 tsp. salt
1/8 tsp. fresh ground black pepper
Preheat oven to 350 degrees. Remove sausage from casing and crumble it into a pan over medium heat. Add the celery and onion and cook, stirring, until browned. Drain fat if necessary. Beat the eggs in a bowl. Using a spoon, mix in the sausage mixture and all the remaining ingredients. Pour the stuffing into 8 by 8-inch square baking dish and bake until hot and browned, about 30 minutes. Serve immediately.
Makes 8 servings.
Nutritional values per serving: 120 calories, 2g fat, 2g saturated fat, 3 g carbs, 1g fiber.
