Hi! I used this forum A LOT a few years ago for inspiration during my wieght loss and again after my 1st son. Now, after my second son, my weight is just sitting there. I am breastfeeding, so not cutting carbs severely.
I am staying at home this time around, so budget is tighter.
I broke down and bought a wellness center pass and have been going 3 times a week and feel better some...
My biggest problem is cooking meals.
My 1st son, now 2 LOVES anything Italian and Mexican. Most of which is easy to make, cheap, and easy for him to chew, and I usually make a full recipe so that we have easy leftovers for the DH and son and I for a day or two.
Most of the recipes from before are really more adult foods. He doesn't really like steaks and a lot of the lower carb veggies. It will be a few more years before I am comfortable leaving out starchy veges like potatoes and corn for him.
I just feel like when I get ready to really get back into the LC WOL (in regard to breastfeeding), I will be making two meals at each meal time.
Anyone else have suggestions for kid-friendly recipes that would count as low carb for me? Or has anyone ran into this problem?
