Default Separate meals?

Hi! I used this forum A LOT a few years ago for inspiration during my wieght loss and again after my 1st son. Now, after my second son, my weight is just sitting there. I am breastfeeding, so not cutting carbs severely.
I am staying at home this time around, so budget is tighter.

I broke down and bought a wellness center pass and have been going 3 times a week and feel better some...

My biggest problem is cooking meals.

My 1st son, now 2 LOVES anything Italian and Mexican. Most of which is easy to make, cheap, and easy for him to chew, and I usually make a full recipe so that we have easy leftovers for the DH and son and I for a day or two.

Most of the recipes from before are really more adult foods. He doesn't really like steaks and a lot of the lower carb veggies. It will be a few more years before I am comfortable leaving out starchy veges like potatoes and corn for him.

I just feel like when I get ready to really get back into the LC WOL (in regard to breastfeeding), I will be making two meals at each meal time.

Anyone else have suggestions for kid-friendly recipes that would count as low carb for me? Or has anyone ran into this problem?

Mary, I am sometimes forced to eat something else besides what carb-addicted DH and my kids want to eat. It is easier than trying to get them to try to eat my lower-carb stuff.

The other thing I do is to make extra meat and veggies for me, while they eat the potatoes, pasta, and rice. It doesn't tempt me anymore to fix the high-carb stuff luckily.

My DH would benefit greatly from LCing, as he is almost 300 lb now. I am hoping he comes around after he sees my results.

Thanks for the reply. LCing was SO much easier for me before I had to cook for Jake (my son). I really wish he would take more to the healthier veggies... I keep offering them on his plate. They keep ending up in a chewed up pile beside his plate. Ugh! mb

Hi there, I have found that somedays I make what they like and adjust it to my needs and other days I make what I like and adjust it to their needs (wants!). One that everybody likes is tacos. Everyone makes their own and uses a shell/tortilla, I make taco salad. The kids are happy and I'm happy. Now if we could just eat tacos every day... : )

Thanks Donna! I did find some whole wheat tortillas that have almost nil for carbs, and taste fair...

BTW, your stats look great. Keep up the good work because whatever you are doing IS working! mb

(I guess I need to go revamp my stats to be post pregnant. Ugh!)
