Default Greek Scramble (My favorite LC breakfast, currently!)

1tbs Butter
3 raw eggs whisked with salt, pepper, & spash of cream
1-2 tbs. chopped red onion
1/2 cup artichoke hearts
3 kalamata olives
small handful of crumbled feta

In a small frying pan melt butter, saute onions. When onions begin to brown slightly, pour in egg and scramble it, moving it around with a spatula. When the egg begins to firm up, move it over to one side of the pan and toss in the artichoke hearts & olives to warm. Continue to scramble the egg, when it's cooked to your liking mix everything together and top with crumbled feta. Toss again until everything gets 'melty'. Scrape the mixture into a bowl & enjoy! Yum!!!

Sounds great! I love feta-- just a tiny bit adds so much flavor!

Do you just buy the canned artichoke hearts for this?

This definitely sounds like one I want to try, minus the olives however.
