I love this recipe and use it often whenever I make mashed potatoes for my husband. I also add 3 or 4 oz of cream cheese. the texture is like lumpy mashed potatoes and the cheese and onion hide the cauliflower flavor so you can imagine pototoes. My husband tasted it and said it was ok; but then he hates lumpy potatoes and really hates cauliflower and knowing that he had negative thoughts beforehand.
