Default Wholesale "Gourmet" Unsweetened Chocolate in the big block

A brand of unsweetened min 96% chocolate I've never seen before. Any comments on the source or quality?

Belcolade Noir Absolu Ebony - Unsweetened

Sounds good but as I say, I've never heard of Belcolade...and the 5kg block is a big investment

Also the Michel Cluizel 99% Noir Infini = way down near the bottom a kg of pastilles...or even MORE expensively and a larger investment! 5kg of the pastilles (not )

We use Belcolade at the Fish House, not unsweetened though. The quality is very good, comprable to Callebaut.

Never heard of Michel Cluizel.

ooh, that sounds yummy, especially with Karen's recommendation. Did you ever get any, Jude? I see they're sold out now. I wouldn't mind going in on some with you if and when they get new stock.

Karen or anybody, how long can you keep unsweetened chocolate in the fridge or freezer?

Hey, there, Anny!

To my knowledge, unsweetened chocolate (or any chocolate, I think) is stored airtight at room temperature, and up to 18 months... Cool, dry cupboard should do the trick. I'm pretty sure the condensation/moisture buildup from refrigeration is "degrading" to the chocolate.

And no, I haven't yet got any of the big block (excellently priced, too); that whole project went on the back burner as I still have a fair assortment of chocolates to use up -- though I did recently "score" 5 lbs of Criollo Cacao Nibs & Nuts, couldn't resist the price! I use them for unsweetened chocolate "chips"; Karen put me (and the rest of us) on to that some time ago!

What proportion of the block would you be interested in?

edit: from the horse's mouth re the storage of the Absolu Noir (in pastille form but the principle is the same):

Storage
Store 18-20°C, max. 60% relative humidity. Ensure bag is always properly closed.

Yep. Skip those old-schoold maltitol chocolate people, and go directly to some more interesting edgy producers using, basically, inulin IIRC...

That d-lectable looked really good, but I couldn't find anything with the ingredient lists or nutritional info on that page. Makes me a tad nervous about what is or isn't used.

I've got some of the info, they emailed it to me along with the comment that they're in process of adding nutritional info to the site (for each product, that's a bit of a job -- I know, I get to maintain my own site in my "spare" time ).

They had really good response time to my email info request on specific products.

I'm looking into (long tedious process, but...) getting their products on my website here in Canada.
