Default P1 Friendly Biscuits and Gravy

This came out so much better than I thought it would. I literally put this together this morning, a weekday, in less than 10 minutes. And it's Induction ok! The "Biscuit" is really a MIM with mashed cauliflower (fauxtatoes) added! I added it to the "gravy" too to help add body and thicken.

Cauliflower MIM:
2T prepared fauxtatoes (mashed potato style cauliflower, however you make yours is fine)
2T flax
1 Egg
1/2 tsp baking powder
salt and pepper to taste

Scramble the egg, mix everything together, microwave for a minute to a minute and a half depending on your machine.

2T heavy cream
1/4 C fauxtatoes
2oz sausage*
1/4 C coconut milk**
xanthum gum
salt and pepper to taste

Mix the fauxtatoes, heavy cream, and coconut milk together. In a small saute pan brown the sausage until done. Add the "gravy" to the pan. After about 30 sec sprinkle the xanthum gum very lightly until you get the consistency you want.

Slice the MiM in half and pour the gravy over it. Enjoy!

**This is the milk from the carton not the can. If you don't have it add some chicken broth, unsweetened almond milk, or even water. The gravy came out really rich and I think it would be regardless.

*I use Jimmy Dean's reduced fat breakfast sausage. It's still got a lot of fat in it but I like the taste better. Adjust your totals for your own ingredients, of course.

oh yum. I will have to get the ingredients for this, biscuits & gravy, used to be my favorite brekkie.
