Default MIM waffle!

I just put my MIM in my waffle maker and it was great! I made regular waffles for the family and didn't want to be left out. I apologize that I don't have the original link to the MIM recipe, but like almost everyone, I've modified it a little bit:

1/4 cup flax meal
1/2 tsp baking powder
1 tsp Penzey's cinnamon
1 tsp fresh grated nutmeg
1 tsp vanilla
Dash salt
5 drops Sweet Ez
1 egg
1 tab EVOO

Mix dry ingredients, add wet.

I thin my MIM batter with a dab of water and make pancakes that are the BEST. so I'm sure it would make great waffles, too!

This turned out well! topped with 1/4 cup blueberries heated with 1 oz cream cheese and a packet of krisda stevia. The waffle held together perfectly, it looked awesome! The colour of the berry cream cheese mix was a bit offputting; next time I'll try cooking a few blueberries right into the waffle instead and drizzle sweetened cream cheese over top! The flax is always a bit weird and greasy... that said, I'd make it again!
