Default Mini Omelettes

Ingredients:

Eggs
Bacon
Mushrooms
Oregano
Salt & Pepper

Method:

Put oven on HOT
Mix about 3 eggs in jug/bowl with salt, pepper and bit of Oregano
Chop up (or snip with cooking scissors) Bacon
slice up mushrooms
Fry off
Get hold of Muffin tin or deep cupcake tin
butter the moulds
pour in small amount of egg, less is more, it will always look like not enough but it is fine!
Drop in the middle some of the cooked bacon and mushrooms
pop in oven until it puffs up and rises, how long? Well, until it's done!!

Pop 'em out, eat one because you can and pop a few in the fridge for later. Lovely with a salad and a bit of sour cream with black pepper grated in.

Had some today, will post a pic next time.

Can add toms and cheese, or other things but the bacon and mushrooms works sooooooo well.

Enjoy, oh and perfect picnic low carb food.

Try onions and parmesan, or finely chopped leeks and turkey or chicken, or salami and mozzarella for that slight Pizza taste.
