Cool Hashbrowns/eggs/bacon (or ham) - Induction Friendly!!

This is sooo delicious! My hubby and I are in induction right now and were bored w/the basics, so we started playing with lots of different "induction" foods and mixing them together.

Ingredients:
2-3 eggs (We use more when we're really hungry since they have less carbs)
1 cup sliced radishes
3-5 pieces of bacon or ham
onion powder, garlic powder, parsley, salt/pepper to taste (All optional)
Carbs: Since cooked radishes seem to have a few more carbs then raw ones, you're looking at approx. 6 Total Carbs. Add additional one to accomodate garlic/onion powder if used.

Instructions:

Cook Bacon or Ham (We prefer to just microwave precooked bacon)

Slice up 8-10 radishes keeping in mind that the smaller they are, the quicker they will cook (We have a mini food processor that works great for this)

Drop the radishes & either real butter or olive oil into a skillet and let them start cooking for a minute.

Add your cooked bacon and 2 eggs and seasonings to the mixture. Stir around in the pan so that the eggs become more like scrambled eggs. (Be careful not to oversalt, we found that it needed very little with the bacon)

Let cook about 5 minutes and then enjoy! It's going to make quite a big bowl full, so feel free to cut back a little on the radishes if you prefer!

This is somewhat true. 1 c. raw radishes will equal approx. 1/2 cup cooked; therefore, the carb count for 1 c. raw = carb count of 1/2 c. cooked

(You can pack more cooked radishes into 1 cup so the carb count would be higher) I hate to be nitpicky but pretty soon you'll have someone posting and asking you "Why do cooked radishes have more carbs than raw ones?" Just thought I'd save you the trouble.

BTW--radishes are a wonderful sub for hash browns. I even drop them whole into stew or soups.

I'm envious that you discovered the recipe during induction. I ate plain and simple for 2 weeks or more. Welcome to the forum and good luck to the both of you. Glad to have you here.

Hmm...I had originally thought that the 1 cup equaled about 10 radishes which the calculator told me was about 1 carb. However, when I went to enter in that same cup for cooked it told me that it was 5 carbs! (I realize now that it was measuring them cooked like you're saying...OOPS!)

So, if I'm to understand this right... 10 cooked radishes would not equal 5, they'd equal... say 2.5? (A little more then the 1 carb since they're cooked??)

Woohooo... I'll be having this meal twice as often now!

You should have seen us trying to make our own crab dip & ice cream last night...total flop. So far this is the only "creation" that's been good. I think I'm going to need to start sifting through everyone else's recipies now!

I wonder how these would be if you shreded them like actual hash browns. How is the texture. HUM, I will have to try this one out.

That's why I like using scales over volume measuring. 10 oz of radishes is the same cooked or uncooked.

I agree, Nancy. I love my food scale!

I'm not sure I would've thought to use radishes like this. I usually just eat them sliced raw with ranch dressing. This sounds really good, though. I think I'll give it a try.

i like radishes raw, but not too sure about cooking them. I've heard some other people say on this board that they would rather eat dirt than cooked radishes!

Hmmm maybe I won't knock it until I try it :P

try to find the large daikon radishes at an asian grocery store, they make great hashbrowns and/or fries!
