Default Turkey Veggie Lasagna

First layer:
Spray nonstick spray in an 8 X 8 inch pan
Combine 2 eggs, 1/4 cup grated parmesan, 10oz box of spinach, microwaved and drained, garlic powder, oregano, and basil. Put into pan and flatten out. Turn on oven and place pan into oven while preparing next 2 layers.

Second layer:
While spinach layer bakes, defrost enough yellow squash to cover a layer of the pan.

Third layer:
Brown 1 1/2 pound of ground turkey. Drain. Add one 8oz can roasted garlic tomato sauce. Simmer. Add garlic powder, basil, and oregano.

Remove pan from oven and add second layer (squash) and top with some shredded mozzarella. Then add third layer (turkey) and top with 2 cups of mozzarella cheese. Sprinkle more garlic powder, basil and oregano over the cheese and bake until cheese is melted and starts to brown. Let sit for a couple of minutes before cutting.

If you cut 9 equal squares, each has 4 grams of carbs.

Default Good enough to eat

2OnAtkins,

Wow ! This sounds good enough to eat. Made something similar awhile back, 'cept I used eggplant, but it tasted so good I felt guilty eating it.

You can bet I'm going to try this one, and bet'cha' a bunch I'll love it. Thanks.
