Default Individual Blueberry Cobbler

Like Grandma used to make, but much lower carb!

Blueberry Cobbler

1/4 c. Carbquick
1/4 c. Davinci SF Vanilla Syrup
1 T. Blueberries (I use frozen, straight from the bag)
1 T. Butter

Oven 350. Place butter in a small, ovenproof bowl and place in the oven to melt while oven heats.

Meanwhile, in another small bowl mix Carbquick and syrup well. It will be thin and "puff" while you wait for the butter to melt.

When butter is melted remove dish from oven and immediately pour Carbquick mixture over it -- do not stir. Plop blueberries over the top (they will sink). If desired, spinkle a pinch of Splenda on top.

Bake in 350 oven for about 15 min or until golden brown.

Ok! Tried it out tonight and its great! I used black cherry SF syrup and raspberries. Num!

This looks great! I love the individual serving size dessert recipes.. A great way to have a goody, without having lots of temptation sitting in the fridge (calling my name).. Mammac, you have lots of good ideas. You're really enjoying the Carbquik too, aren't you? Isn't it wonderful?

I found a way to speed this up.

It does just fine in the microwave. I used 1T of cream instead of the butter and then I cooked it uncovered in the microwave for 2 minutes. Came out great!

BRAVO! I tried this today and was super pleased! carbquik is simply amazing, i cannot believe it is legal! I made this in a muffin pan and baked for 12 min so it was still soft. wow it was yummy. kinda reminded me of a sugar cookie dough. Im thinking about making a big one large enough to fill a small cake pan next time.

i wanted to bring this recipe back to the top, it is soooo good, i make this at least three times a week and my family just loves it, even those not LCing.
i havent tried many of the variations because we just love the blueberries,LOL.
My hubby takes this at least twice a week in his lunch

to golflady59, i bought my carbquick on line at netrition.com, i used up my first box quickly(makes wonderful biscuits,LOL) and just got my reorder of 3 boxes.
i think the carbelose(might not be the right spelling?) website has a store locator on it
i love this carbquick, it tastes great and allowes me to make many things now.
