My kefir making has turned into kefir cheese making. I've been using 18% table cream and it basically comes out with a consistency a bit thinner than cream cheese, and thicker than sour cream, and tastes like a bit of both. It's a fantastic dip. So I made some coconut flour pitas, and dipped them in guacamole, salsa, and this kefir sour cream.

Tonight, I pulled some tilapia from the freezer and we'll have that with broccoli/cauli and sweet potato.

Had to grab dinner at the deli, so I wound up with roast pork, melted cheddar on top, on a bed of coleslaw. It was so good I'll have to tell them this should be a "thing."

But outside of low carb world, people wouldn't get it.

Chicken salad topped with spinach and avocado. It was great! Making a spinach pie now for tomorrow. It was going to be a spinach and feta pie, but my feta went very very very off. Ugh.

Tonight DH said he will try mushrooms, so I am making portobello pizzas with roasted bell pepper. Italian chicken for the entree.

I think it's starting to be a thing in some places. I was at a ball game and the Rogers Centre in Toronto does pulled pork nachos with the pork and coleslaw on top (rare designated higher-carb junk meal). I thought it sounded weird, but the combo of pulled pork + coleslaw actually goes really well together. My burrito place at work (Smoke's for those in the GTA) also has coleslaw to go right into the burritos, one of which is pulled pork.

I love portobello pizzas. Gotta get some soon, before it gets too warm to use the oven.

Dinner last night was salmon burgers with guacamole and fried eggs on top. Delicious but filling! I couldn't get through the second one that hubs made for me.

Next I ink I will try to get him to try spinach/cream cheese stuffed mushrooms- he loves the spinach mixture in a stuffed chicken breast, so now that he is opening up to mushrooms, I think he would go for that.....
