Default "Big Salad" ideas!

How about sharing some creative ideas for your Big Salads? I like thinking of new things to put into salads for flavor, texture, and colorful appeal. Leftover roast veggies, esp. asparagus or roasted peppers; black sesame seeds; chopped fresh herbs; marinated olives; toasted nuts -- lots of ways to add crunch and nutrition!

I often crave a salad in the morning, and just thought today, why not make a Brekkie Salad? - w/ bacon, scrambled egg, and chopped parsley? Going to try it soon.

Anyone else want to chime in with ideas? I wonder what was really in Elaine's Big Salad (from Seinfeld)!

Good idea!

I have a star fruit tree and when I looked up carbs in star fruit it says that an average sized one has 3-4 carbs... not bad for a fruit. So, I sliced up 1/2 of one and added it to my salad along with feta, cherry tomatoes, walnuts, olive oil and balsamic vinegar... yummy! The star fruit adds a nice crunch!

My favorite salads were usually something like:

Mixed baby lettuces with herbs (comes prewashed from TJ's)
Goat cheese
Pieces of chicken (warmed or cold) or steak
toasted Pine Nuts (or other nut)

A simple dressing of:
Rice wine vinegar and oil

Or

Bacon dressing:
Melt bacon grease, add favorite vinegar and a smidge of splenda.

Here are few things that I include in my salads and no, not all at the same time...

Mixed greens or lettuce, spinach, arugula
plum or grape tomatoes
english seedless cucs
sugar snap peas
roast red peppers from a jar
hearts of palm
kalamata olives
thin slices of sweet onion
capers
avocado
yellow, red or orange peppers
steamed asparagus
steamed broccoli


My salads can get pretty large!!
I use Good Seasons zesty italian with evoo and balsamic vinegar and cayenne pepper cuz I like it HOT!

ps- I add any protein I've got on hand ie: eggs and tuna, chicken, leftover steak, shrimp, leftover salmon filets, etc. I don't put cheese into my salads simply because I don't taste it and I can't afford the calories.

I love salads with all sorts of things in them. I usually get a large plastic bowl with a lid, make a large tossed salad and use it till it's gone. For dinner, I set that large bowl out with smaller bowls and we all get us our dinner salad. Here are a few things I like in my salad

Lettuce
Purple cabbage
Spinach leaves
Red onion
Bell pepper
Cucumber
Tomatoe
Mushrooms
Pumpkin seeds or sunflower seeds
Bacon Bits
Shredded cheese
Chopped walnuts

I love that episode! I believe that they end up in a coffee shop that doesn't have a big salad and they offer her two regular salads but it's just not the same... I totally sympathize!

I'm a really big fan of throwing together some organic field greans, MAYBE some baby spinach, parmesan cheese, warm chicken (dark meat, from those pre-BBQd chickens the supermarket sells, nice warm and greasy yum), olive oil, vinegar, and just a few berries (maybe a few blackberries/raspberries).

mmm....my mouth is watering

I love Seinfeld, but there was a lot of HC noshing on that show. Jerry's favorite snack was a big bowl of cereal, and the DVDs have cereal-bowl graphics accompanying the episodes.

I add almost any leftovers and, if they don't work too well, crumbled bacon fixes pretty much ANYTHING! Re your brekkie salad - chop some tomato and onion to add to that - it's delicious. Cook them briefly before you add your egg mixture.

That was one of my favourite Seinfeld episodes too, right behind the Food Nazi.
