I discovered this week that I could eat a large amount of raw spinach if I chopped it very finely. Didn't look as daunting as a big fluffy pile. Also, Braised broccoli - I used garlic, anchovies and chilies for flavour - cooks down to a much smaller volume than just simply steaming it. Mighty tasty too!
