Default Golden Cornbread

I have a grain mill and I grind popcorn to make my cornbread because it’s very low carb compared to regular cornmeal. 3 tablespoons of popcorn has 25 carbs and 5 grams of fiber. Ground up 3 tablespoons of popcorn will make 1/3 cup of meal. But you can buy whole-grain cornmeal at a health food store that has the same carb count.

I am the only one in my family who does low carb and they prefer this cornbread to the high carb cornbread that I used to make.

Golden Cornbread

3 cups-(12ounces) almond flour
2/3 cup-(3-1/2ounces) popcorn meal
1/3 cup Splenda
4 teaspoons baking powder
1/2 teaspoon salt
4 eggs
1/4 cup oil
1 cup LC milk

Put a cast iron skillet into the oven and preheat the oven and the skillet to 425°

Mix the dry ingredients together, make a well in the middle. Add oil, eggs, and milk in the well and mix with a wire whisk. Allow to stand for 5 minutes to give the ingredients time to hydrate.

Take the hot skillet out of the oven and place it on the stove over high heat. Put just enough oil in the skillet to swish it around good and heat the oil.

Pour the batter into the hot pan and place it in the oven and bake at 425° for 25 minutes or until golden brown and toothpick inserted into the center comes out clean.

Interesting ... may have to test this out on my non-low carb family. It would be a good alternative for pot lucks!

Hmm. This may well be lower carb than normal cornbread, but it still packs quite a carby punch.

According to my calculations (and I didn't even include the LC milk), with 62.8 carbs ( ) for 100 grams of air popped popcorn, 39 for 3 cups almond meal, 9 for the baking powder and 8 for the Splenda - all net carbs - that comes to more than 118 carbs for the whole thing, or 10 carbs per serve (if 12 servings). If you make 8 servings, that's an even scarier 15 carbs per serve.

This may be fine to serve to high carbers, but I wouldn't touch this. Just sayin'...

Three tablespoons of popcorn kernels ground up makes 1/3 cup of meal. So 1/3 cup of popcorn meal has 20 carbs.

The white popcorn has fewer carbs but when I was at the grocery store the yellow was all they had that day so that's what I got.

3 cups-(12ounces) almond flour -24g
2/3 cup-(3-1/2ounces) popcorn meal (ground raw popcorn)-40g
1/3 cup Splenda- I use liquid - 0

4 eggs -2g
1/4 cup oil
1 cup…homemade LC milk -4g

Total............. 79.9
Divided by 12 = 6.40g

do you think there would be another way to grind the popcorn? Would it kill my coffeegrinder do you think?

I won't be buying a grainmill just for popcorn but I'd love try this recipe, I love cornbread.

I don't know if it would kill your coffee grinder or not. I live 75 miles from the closest city and we don't have any health food stores out here. But I have been told that you can go to a health food store and buy whole grain stone ground cornmeal that has the same carb count. If you have one near you it would be worth it to stop in and see if you can find some.

I use this cornmeal to fry fish in and salmon patties.

1 can – drained – Wild Alaskan Sockeye Red Salmon (my favorite)
4 eggs, beaten
1/4 cup coconut flour
1/2 teaspoon Garlic Seasoned Salt
Pinch of Old Bay

Mix ingredients thoroughly…form patties…coat lightly in ground popcorn…fry.

Makes 4 large patties.

I just did a google search and didn't really find anything like corn extract or flavoring. Too bad, then one could just omit the corn altogether.

I just ground up 3 T. of popping corn in my coffee grinder and it work perfect will try your recipe!
