Tracy, it's a little of everything. First and foremost, your stomach doesn't empty as quickly, nor your small intestine, when you eat mainly fat and protein: they both take significantly longer to break down into useable components than any carb you can think of.

Second, fat is known for its ability to satisfy hunger, so if you don't eat it with a lot of carbs, your appetite will go down. Carbs trigger a MORE MORE MORE response in our digestive systems.

Gary Taubes, in Good Calories, Bad Calories, talks about a study where people were divided in two groups, in an effort to get them to gain weight. The first had high fat, low carb. It was like pulling teeth to get most of them to eat upwards of 3000 cals/day. And, even if they did, they didn't really gain.

The high carb group, OTOH, would complain of hunger, even if they were eating 10K cals/day. Of course, they gained like crazy, too.
