Default South Beach Sauce 4 Chicken

Hey everyone...just wanted to put this out there. I had a piece of left over grilled chicken and made a little peanut sauce for it. It was sooooo good - thank God I only made a little but it really tasted good over a piece of boring old grilled chicken.

I heated up a little bit of olive oil, shook in some spicy red pepper flakes, a teaspoon of natural peanut butter...then i warmed it up until it blended - then threw 2 Splenda's in it and it was sweet, spicey and REALLY good over chicken. I didn't have a morning or afternoon snack so it was okay to use that peanut butter then.

Just thought I'd pass it along...to me - chicken gets boring and is dry sometimes.....

I do something similar when I make my version of cold sesame noodles. I don't use noodles but the taste is very close. I use thinly sliced onion and shredded cabbage as the noodles.
My sauce is made from low sodium soy, sesame oil, crushed red pepper, grated garlic, ginger, a bit of hot chili oil and some peanut butter. I heat this slowly and stir as it blends.
I make the sauce while the veggies are getting soft. When the sauce is done, I pour it over the veggies and let it all cook together.
