Default Almost Cream-of-Wheat

Cauliflower Cream of Wheat cereal!

I made some cream of cauliflower soup, but used water instead of stock and left out the onion. It makes a great "cream of wheat" style breakfast when you add some sweetener, cinnamon & fresh nutmeg. Also a great way to get in a healthy dose of cruciferous vegetables!

1 medium head cauliflower, broken into florets
1.5 cups water
2 TBSP walnuts of almonds (this gives it the "gritty" wheat texture)
1.5 cups low carb milk (or 1.5 cups water/cream mixture)-Less if you like it thicker
Cinnamon, nutmeg, sweetener to taste


Put cauliflower florets in a large pot, add 1 1/2 cups water. Bring to a boil for 15 minutes, covered. Pour florets with water (don't throw out steaming water!), almonds and LC milk into food processor. Process until smooth. Add sweetener and cinnamon to taste.
I freeze 1 cup batches and eat it for breakfast with some protein.

I'm not sure if this idea has been used before. I found the recipe in a low fat English cook book and it was meant to be a savory soup (which is also yummy!).
