Default Baked Eggs and "Rice"

I grew up eating eggs and rice all the time. I thought I'd try a little bit different lc version. It's not exactly the same but really really good. And very decadent!

2 eggs
1 serving cauliflower "rice"
1 oz shredded cheese
2 T heavy cream
1 T butter (optional)

Use a little bit of the butter the bottom and sides of a single serving casserole dish. Place the "rice" in there and spread it around. With a spoon make two indentations for the eggs. Crack the eggs into the indentations. Sprinkle the cheese all over and pour the cream over it. If you want to get really decadent you can chop the remaining butter into little cubes and arrange them around the top. It would be fine without it though.

Bake at 350 for ~20m, more or less depending on how well cooked you want your eggs.

For the cauliflower rice I just took a pound of cauliflower, "riced" it in my food processor with the S blade (easier than grating IMO), and sauteed it with 2.5oz finely chopped onion and a Tblsp of butter. This made 4 servings.

The nutrition info includes the butter. Leaving it out would take off about 120 calories and 14g fat.

Sounds interesting. I did a little quiche one time with mashed up leftover cauli, eggs, cream and m-jack cheese. I LOVED it! the cauli tasted like potatoes in it to me. Hubby did not like it, but then he doesn't like much of anything on eggs but cheese. But I suspect it tasted a lot like your dish here.
