Default Cauliflower

My husband HATES cauliflower, but I'd sure like to make like a cauliflower and cheese dish to substitute mac & cheese, or faux mashed potatoes and feed it to the whole family instead of making a side for me and a side for them... any suggestions to make cauliflower taste less...well... cauliflowery?

Don't overcook it, especially if you're serving it plain or with just butter or cheese.

Cauliflower is great! One of our favourite winter dishes (because it's so warm and filling) is to cook ground beef or loose sausage with some onion, garlic and spices. Meanwhile, boil some cauliflower until it's soft enough to mush. It doesn't have to be mushy, just cooked for a bit. Then I drain the cauliflower, mash it to semi small bits and add it to the then cooked meat. I mix it all up and cook it for about 5-10 minutes on a medium heat. I love this dish because the whole thing costs a couple of pounds and it tastes great.

Other than not overcooking it, I can't help you on the faux potato or rice area. We love it for how it is, so I just make it like I would potatoes. I use cream instead of milk, but we don't mind the slight cauliflower taste.

My husband doesn't like it either. My dd and I say, "FINE, more for us!"
I make a faux casserole and freeze it so I always have it when he's eating his carby poisons.


I do add (not all at once and sometimes different things):
sharp cheddar, sour cream, cream cheese, ricotta, blue cheese dressing, butter, mozz. (oh, heck, ANY kind of cheese).

I've now got two low carbers and one who eat anything that's not nailed down (dh). My dd likes different lc food too! so I'm running a bit of a diner here.

I make a lot and freeze on Sundays.

I always serve it as "something saucy on cauliflower" and make sure it is something chunky and rich and spicy. Stew Beef with onions and peppers in a cheezy sauce is their favorite. I never made the faux-tatoes work for me, but I am happy with the Faux-Rice.

I hate to say this, but people who hate cauliflower, will most likely hate the recipes with cauliflower. I have tried, time and time again over the years, and I mean TRIED, but I just can't do it. I have tried almost every recipe and I can still distinctly taste the cauliflower. So if he hates it as much as I do, you may still be out of luck (in which case I would tell him to enjoy fixing his side dish ) I wish you the best of luck. I WISH I could eat it. It's one of the few things I cannot stand (cooked, I can eat it raw)!!

I had a feeling that I would never be able to get him to eat it...but I was hoping someone had some miraculously brilliant idea. Like "sure! I put lemon juice in with the cauliflower and it was magically delicious!" or "you steam it, then you stir it three times and do a curtsy, touch the spoon to your forehead, and it suddenly doesn't taste like cauliflower anymore!"

You sunk my battleship! That's almost exactly what I was going to recommend!! Except stirring it 3 times is not enough!

LMAO!! Too funny! I really wish there was something! I always see recipes that get RAVE reviews and everyone says "I don't even know I'm eating cauliflower", so I try it and immediately, I can't get past the cauli-smell. I so want to be able to eat it! I've learned to live without potatoes or potato substitutes, so it's okay, it would be nice at times though. Sigh.

I never liked it till a few years ago (I'm in my 50's so that tells you how long I didn't like it!). First I started having it raw with dips. I tried a faux mashed potato thing and hated it. Then a few years after that, I tried Linda Sue's Just Like Stuffed Baked Potato recipe and fell in love!

Now I mostly sautee it after finely chopping (rice sized) and then add it to cooked ground beef along with sauteed onions and red peppers. Top with shredded cheese and sour cream (they always make everything better!)

Last month, I tried Cleochatra's Cauliflower crust pizza and even my 31 yr. old DS who hates even being in the house when I cook cauliflower loves it! He won't try it any other way but he loves that pizza!

I made one of the faux stuffed baked potato cauliflower thingys a couple of weeks ago. Immediately after mixing it all in the saucepan, I tasted it and it was great.

Then I baked it, as per the directions. Suddenly....it was all cauliflowery tasting again. Ick.

I personally question the need to eat cauliflower. I loath it, and so for me it's just not worth it. I can handle broccoli, and I like cabbage, so that's just going to have to do the trick, cruciferous veggie-wise.

Can you believe my 2 kids, aged 7 and 5, polished off an entire head of pureed cauliflower last night? They LOVE the stuff. I puree it with melted butter, a bit of parm cheese, salt and pepper and a trickle of heavy cream.

I agree with everyone who says that if you don't like cauliflower, you aren't going to like the dishes made from it.

I've tried adding lemon juice to water used to boil cauliflower. It doesn't help.

Have to agree, I have the same trouble with my dh.
