Thumbs up French zucchini/courgettes

I got this WONDERFUL and quick recipe from a French friend of mine. Incidentally, she introduced me to low-carbing years ago. She's a dietician and worked at , I'm assuming was a diet clinic. Anyway, she just told me to cut out all sugars, which I did and lost about 15lbs, but then quickly gained them back. I digress.....

5 medium zucchini/courgettes, sliced
2 C French Emmenthal cheese*, grated (hence the name of the recipe )
1 C sour cream
1 tsp nutmeg
salt and pepper

Butter a loaf pan. Layer zucchini to cover the bottom of pan, sprinkle salt, pepper, and nutmeg over zucchini. Sprinkle cheese over spices. Continue layering. I usually do three layers. Top with sour cream, just sort of blob it on and sprinkle spices on top. You can add a little more cheese, if you like. Cover and bake for about an hour at 180 (oops, sorry.... been living overseas a long time, heehee) 350.

*This is very similar to Swiss cheese, but then it would be "Swiss Zucchini"

Serves 4 (large portions)
21 g carbs minus 2 g fiber = 19 ECC for whole casserole
4.75 g carbs per serving
