Low carb leftover “thingy”
I always wonder what to do with low carb leftover in the fridge before they turn into biological weapons. Cooked veggies, some chicken, the last slice of meatloaf, one slice of cold cuts, one asparagus, you get the idea, and every fridge has such collection.
So, take everything eatable, and dice it to ½” cubes, add good Swiss cheese (cubed), add a little of chopped olives or even capers and mix them all up. The reason the amounts are so “precise” (a little, some, etc.) is because everything depends on how much leftovers you have. I end up adding one cup of cheese to 2 cups of chopped leftovers.
Now in a mixing bowl mix 5-7 eggs and 3 tablespoons of sour cream, salt, pepper, a splash or two of Tabasco, and mix well until all nice and smooth.
Now combine the chopped stuff with the egg mixture and pour into a very well greased pan (you can use a round pie dish, my favorite is a loaf pan) and bake it uncovered for 15 min in a 325 oven. After 15 min (it should start puffin up) sprinkle some shredded Parmesan cheese, and continue to bake until done (basically until the eggs set up)
Let cool 10 min before cutting… Oh yum..
