I once had a French chef explain to me that the reason almost all beef is served rare in France is because the beef their is completely grass fed and tastes differently when more fully cooked than does the American corn fed counterpart.
If this is true, then considering the omega-3 to omega-6 ratio of grass fed beef compared to that of corn fed beef, the French paradox seems much less of a paradox and more of an inconvenient truth. What our food eats matters.
Ive been looking at the fats and meats we eat, for about 2 years. I came t the conclusion is it all about grass fed. High omega 3 and vit A and much lower omega 6's than grain fed. I buy more Kerry gold, and more grassfed beef now.
