Default Almond Cake

Hi Karen

I wondered if you had a recipe or tips on making an almond cake/torte.

The kind of cake I have in mind is one I had in Italy a few years ago - a damp close textured lemon flavoured cake made with ground almonds and no flour.

Hi Tony,

The Quick Bread on page 306 makes a great cake. Add 2-3 tsp. grated lemon rind and bake it in a 9-inch round pan for around 45 minutes.

Hi, Karen.


Is it possible to make the quick bread/almond cake gluten-free? In my pre-LC days I used a lot of rice/tapioca/corn starch + eggwhites but don't really know how to go about adapting LC recipes. Or maybe there's an another recipe altogether for this kind of European nut cake?

BTW just tried the tea-infused chevre from The Passionate Cook--used a mint-lemongrass-seaweed tea plus T's Pear Green. WOW!!!

If you're OK with oats, try using oat flour.

The cake can be made without wheat gluten, it just doesn't rise as nicely.

That chevre with tea rocks. The lemon grass version sounds really good!

Default with hazelnuts

Karen, I made this as an anniversary cake yesterday. Did end up subbing oat flour (do you know how its ECC compares to vital wheat gluten?) and also some hazelnuts as I ran out of almonds. It was divine! DH thought he was in Kuchen heaven.

Also can't wait to get more chevre and try different infusions. Am starting a new job out of town for awhile so afraid that's going to cramp my style but will just have to make do.

The Almond Flaxseed Bread on page 308 has no gluten in it whatsoever, if you want to give that a try. ... use the lemon zest Karen suggested instead of (or in addition to!) the blueberries, bake it in a cake pan, and it should make quite a nice wee cake...

Thanks for that nutritional info, Karen. It's been a long day but I think that means that it's only about 6g more for the entire recipe (if it uses 1/4 cup that is). So that's not really much.

And IslandGirl, thanks for the suggestion. I'll definitely try that sometime. I made the bread for an Easter brunch and it was Delish. I like the idea of lemon zest vs. blueberries.
