Default Protien Pancakes

The recipe for "Accidental Donuts" (which were delicious) inspired me to try this variation. They are very simple, and really very good. This was my second attempt, I put Almond flour in the 1st try but they were too heavy.

while heating a griddle or fry pan, mix together...

2 TBS oil
1 egg
1 TBS Splenda (more to taste if you want)
2 TBS Heavy Cream (could probably just use water) to thin the batter a little
1 Scoop Whey Protein Powder (I used Designer French Vanilla)
1/4 tsp baking powder

I put all the ingredients into a measuring cup and mixed it with a fork. (didn't bother to dirty a whisk)

Pour or spoon onto a medium hot griddle. You need to cook them a little slower than regular pancakes so that the middles cook.

I ate them plain, without butter or syrup and they tasted great - kind of creamy, like a crepe. Butter and syrup would definatley dress them up.

The batch made about 8 pancakes, totalling about 5 carbs for the whole batch. I am guessing it is much cheaper than pancake mix.

I tried the protein pancakes and they are the best!! Better than any others and I have tried quite a few lately in my quest to NOT have eggs for breakfast. Thanks for the recipe!!

A little sweet for my tastes, so next time I'll leave out the Splenda, but they did NOT have the eggy "boing" of so many other pancake recipes... thanks, ckX4!

The doughnuts made with protein powder were a hit with the whole family. I am going to try this in a waffle iron bc I always seem to mess pancakes up when I flip them.

Well any health food store will carry it. Even Walmart has it.

Designer Whey is a brand that many people like and it comes in many flavors.

If you're in a health food store of some size, they might have small samples of different flavors -- this is good since normally it costs a good deal to buy the huge containers this stuff comes in.

I might add that for some people, like me, the taste of protein powder is vile. Even if added to ice cream! But oddly enough, I can tolerate it if it's in something COOKED. I've added a little of it in combination with coconut meal, almond meal, and flax meal, to a variety of recipes -- like lowcarb peanut butter cookies, or some muffin recipes -- and it's done well.

I made this for breakfast this morning and I will make again. I left out the added sweetener bc I like syrup on y pancakes.I only got 3 med pancakes from the batter. It needs something to make it a little more fluffy or bulky. Maybe I will try a little flax meal or soy flour. They were filling. Great recipe.

Great NeWS (4ME ANYWAY) I added 3 TB of flax meal and enough water to bring it to the consistency I like and they were perfect. They were even fluffy. I am really excited!

Wow thank you so much for this recipe ckx4!

They came out great as pancakes but I've made a few modifications to use in place of other things as well. I left out the Splenda and added salt and got a great substitute for slider buns when I fried them one tbsp at a time on a non-stick pan. Try this it -- it comes out great! Really satisfying.

Another thing I tried was to add two tbsp of unsweetened coconut, a tbsp of Erythritol and three packets of Splenda. I then poured this into a muffin pan (1 tbsp per hole) and baked at 350 F for 5 minutes. They came out great! 12 little coconutty cakes. Spread with butter! Mmmm.

The next thing I'm going to try is to bake the slider batter in the muffin pan since then I can get a more consistent size for sliders (plus it's easier than frying them one at a time). Will let you know how that turns out.
