Default Desiree's Lemon Pancake

I found this online while searching for breakfast ideas. The site is: http://www.camacdonald.com/lc/Cookbook/0073.html

There are hundreds upon hundreds of recipes. The one for the lemon pancakes is:

4 eggs
1/4 C. soy flour or soy powder
2 Tbsp. water
2 Tbsp. heavy cream
Pinch of Salt
3-4 oz. butter
Cinnamon
Lemon extract or fresh squeezed lemon juice
3-4 packets of sweetner.

Melt 2 oz butter in a pie plate in oven while preheating to 425. Mix eggs, cream, water, flour and salt. Pour mixture into melted butter in pie plate. Cook at 425 for 8 minutes, turn oven down to 275 and cook for an additional 7 minutes. When it is finished it looks really puffy but flatens out when you take it out of the oven. Lightly sprinkle cinnamon and add 1/4 tsp. lemon extract or 1 Tblsp. fresh lemon. Sprinkle 2-3 packets of sweetener over that. Serves 1 very hungry person or 2 not so hungry people.

I combined a spoonful of cinnamon and a spoonful of Splenda to sprinkle on top then added the lemon juice. We had this with bacon and it served me, my husband and my son. I had 1/4, my son had 1/4 and my husband ate the rest. He added maple syrup to his.

After, I thought that this might make a good mock pizza crust because of the consistency that it gives.. perhaps I'll experiment with that in the near future.

We enjoyed it as a nice diversion from the general morning egg ritual.
