Default Liver & Onions

My hubby loves liver & onions (me? - not so much), but since it's allowed in moderation on the diet, I thought I had better give it a whirl - the low carb way.

He loves it! Yippee!

Liver & Onions

3 tablespoons butter
1 large red onion, sliced - super fine
1 packet Splenda

1 pound calves' liver, sliced about 1/4" thick
1 tablespoon butter
salt and pepper to taste


Directions
1 In a medium skillet, melt butter over medium heat. Stir in onion and saute until softened. Stir in sugar and continue to cook until onion browns a bit ("caramelizes"). Remove to plate.

2 Heat remaining butter in a same skillet over medium heat
3 Brown in melted butter for about 1 to 1 1/2 minutes per side. -Don't overcook.
4 Remove from heat and season to taste with salt and pepper.
Serve liver smothered with onions.

The whole recipe has a carb count of about 37
