From Monday to Friday cookbook
1 tablespoon olive oil
1 skinless boneless chicken breast half
1/2 tablespoon minced garlic
2 tablespoons chopped pimiento strips
2 tablespoons dry white wine
1/4 teaspoon finely minced black olives
1/4 cup chicken stock
salt
freshly ground black pepper
1 tablespoon butter
Heat the oil in a skillet or wok. Add the chicken breast and garlic and saute the chicken for 3 to 4 minutes.
Add the remaining ingredients except the butter to the skillet and bring to a bubble and simmer uncovered until the sauce is reduced. Add the butter to finish the sauce and serve.
