Default More Gourmet success

Hi, Karen! I'm on spring break this week (some break - it's SNOWING again) so I decided to take a course offered through one of my campuses on converting some of my workshops to web courses! It was very fun and our facilitator was from Toronto but managed to handle living in the Van for three years so we had a nice conversation.

ANYWAY, I had to bring my own food so I made Doreen's Thighs (I used boneless chicken thighs since the store didn't have turkey at the moment) and the Twice-Baked Cauliflower. The garlic filled the room! Everyone wondered what I had. When I told my little lunch group that I had severe food allergies, they couldn't believe it. I went through the list of all the things I couldn't eat yet I had something yummy and good-tasting and very satisfying in front of me. They were impressed. The cauliflower didn't look like cauliflower and someone mentioned they did actually like the vege and where could she get the recipe...so it was great fun. The second day they served chicken breast so my lunch became dinner before my night class and then my wonderful, loving DH schlepped out into the snow for a diet soda and a small bag of pork rinds for a snack later in the evening. But I love being successful in my ability to adapt with eating right and I'm SO SO glad for all the resources available. I think I've managed to sell about 50 cookbooks for ya!

I had to drop my daughter at the sitter today so I can get some cooking and baking done ahead of my mom's visit and our daughter's adoption finalization next week. It's good to know that I have allies in this war and some days, it seems like a war against myself mostly. But I've lost 9 pounds in the past 3 weeks and I'm 6 pounds from my goal for the end of the month. So success breeds success. Mom and I are going out to eat after I pick her up at the airport tomorrow (did someone say steak?) and I get to choose the place. She's fine with that. And she gets the red pepper and sausage frittata this weekend for breakfast and some peanut butter cups. It's just been so nice to be able to pick up a cookbook and not have to convert recipes all the time.

So on to new recipes today to dazzle my academic colleagues once again next week. Cheers!
